Gluten Free Blueberry Bread
Yesterday I made some blueberry bread with my new break maker. I was so excited to try it because it has a gluten free setting.
Here is the recipe I used:
- 1 & 3/4 cups gluten free flour mix (or coconut flour, i tried both (I liked the mix slightly better)
- 3/4 cup blueberries
- 1 egg
- 1/2 cup mashed bananas
- 1/3 cup honey
- 1/4 cup milk (I used almond milk. If you are using coconut flour use half as much milk and 6 eggs instead of 1.)
- 1/4 cup olive oil or coconut oil (if using coconut flour use 1/2 oil)
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 1 tsp. non-aluminum baking powder (do not use this if your gluten free flour mix already has it)
Instructions:
For bread Maker:
1. combine all dry ingredients in a large bowl
2. add wet ingredients to the bottom of the break maker pan, add the dry ingredients on top.
3. Follow your bread maker instructions for baking times on a 1 lb. loaf
4. Your bread maker may ask you to add the blueberries at a later time.
For Oven:(this is what I used to do before I had a bread maker)
1. Preheat oven to 350 f.
2. wisk egg, oil and milk together. Add the dry ingredients and combine well.
3. Fold in the blueberries, being careful not to break them and turn the batter blue.
4. Add to a medium size loaf pan and bake for 22-26 minutes or until a toothpick inserted in the middle comes out cleanly.

2nd attempt on the blueberry bread, much better. may look a little burnt but it was not finished until later in the day so it is just the lighting.

here is a cross section of the second attempt on the blueberry bread. it was so YUMMY! and it was gone in a day
It takes some getting used to but once you get the hang of the functions and how to adjust the recipes, i really like the Cuisinart bread maker. My first one was not a stunning success, but the second one where i used the recipe i mentioned was wonderful!

Surprised to see only 1 egg if using coconut flour. Did it still work as well with coconut flour, or was it dry and/or crumbly? You mentioned you liked the GF mix a little better – could it be that adding a few more eggs to the coconut flour version might make a difference? In a coconut flour cookbook I have, it would likely call for 4 eggs or more for a nut-bread-size loaf. Just wondering what you think because I’m not a kitchen person, so I’m not knowledgeable or into experimenting – I’d rather someone else tell me what works.
And I have 8 lbs of coconut flour in my pantry.

I think you maybe right. I will have to test it out again and make an amendment to the blog post. I usually do use more eggs for coconut flour recipes. Thanks so much for reminding me of that fact. I will be sure to tell you the difference when I try it again (most likely next week sometime).
