Veggilicous Gluten Free Breakfast

So easy and a great way to start getting your vitamins from vegetables early in the day.

I try my best to get my 5 daily servings of fruits and vegetables in one day, but I admit, with a busy life it can be very difficult.

I found that the earlier in the day I begin to eat my vegetables and fruit, the more likely I am to meet the 5 a day suggestion and benefit from these vitamin and mineral loaded gems.

This morning I made a simple scramble loaded with veggies, it was a big hit at my house and a whopping 3 servings of vegetables and 15 grams of protein. That will get your day off to the right start…

Ingredients: (for one multiply for more people)

- 1 tsp. chopped onions
- 1/2 to 3/4 cup fresh spinach
- 1 small tomato
- 2 tablespoons avocado
- 1/2 to 1 tsp. Parmesan cheese (more if you like it cheesy)
- salt and pepper to taste
- 2 eggs
- 1/2 tsp. olive oil

1. saute onions in olive oil until translucent. add spinach until it is cooked down.
2. add eggs and scramble with the onions and spinach
3. remove from saute pan and sprinkle on pepper and Parmesan cheese
4. serve on a plate with sliced tomato and avocado (sprinkle both with salt if desired)

So easy, it takes less than 5 minutes and so good for you. High in protein, good fats from the avocado, low in carbohydrates and high in vitamins and minerals from all of those vegetable.
