Simple Scallops

scallops Scallops are an under appreicated mollusk. The truth is they are high in protein and most anyone, even picky non-seafood eaters, can enjoy them. The best part is that they are really easy to make.

(single serving size)
ingredients:
- 3 large fresh scallops, cleaned of the band attached on the side
- 1 tsp. olive oil
- 1/4 cup white white
- dash of salt

directions:
1. heat a small skillet with the olive oil
2. add the scallops and cook on each side for 3-4 minutes
3. add the white wine and deglaze the pan making a thin sauce
4. remove from heat and plate, add the dash of salt right before serving

I love these. I always feel like I am eating something fancy, but really they are so simple. I like to serve them with fresh sauteed veggies or potatoes.
