Do You Know the (Gluten Free) Muffin Man?

Who doesn’t like muffins in the morning? I tend to let myself have a little treat in the morning; a fruit smoothie, a muffin or a slice of coconut bread. I figure I have been starved for about 8 hours, so a little sugar in the form of any one of these treats seems reasonable to me.

Gluten free muffins tend to not rise as high as muffins made from wheat flour so I fill up the muffin tins almost all the way.

I made the muffins the evening before and I left them out by the window. They became a little more moist from the sea breeze/humidity where I live. Toasting them in a pan or in the toaster oven brought them right back to life.

For the recipe for these muffins I just used my gluten free blueberry bread recipe and simply added the batter to muffin tins instead of the bread maker or loaf pan.
